As demand for goat’s milk and cheese has increased in the UK, farmers have expanded their milking herds and are consequently left with greater numbers of young males, known as billies—for which, until recently, there was little market.

Nadia—who grew up in Cyprus, where kid goat meat was a common ingredient—and husband Nick Stokes set up Gourmet Goat to help promote a better understanding of this extremely versatile, healthy and sustainable meat, dishing up delicious street food in the form of kofta wraps, Mediterranean-inspired salads and slow-cooked stews, as well as selling raw cuts.

Hey I love curried goat too, but a far better way to think about this too often overlooked meat – or at least the months old kid goat meat cooked at Gourmet Goat – is along the lines of a blend of lamb and suckling pig: full of flavour, super moist and ultra tender.

If you’ve never tried kid goat meat before – or you’re already in the nom-nom know about how yummy it is – Gourmet Goat is a safe bet for quality eats.

Gourmet Goat sources its meat from farms Nadia and Nick trust where goats are reared ethically and with plenty of room to roam.

With the new fixed unit, Gourmet Goat has the more space and less worry about setting up and thus can play around with what to offer and focus more on the food.

High-welfare British rose veal is now on offer at Gourmet Goat, winners of “Best Street Food Trader or Takeaway” at the recent 2016 BBC Food & Farming Awards.

As is the case with Gourmet Goat specialty, kid goat meat, the veal is sourced from ethical dairy farms to reduce food waste and curb at-birth culling of thousands of dairy bull calves that can’t be reared for milk production.

FYI (in case you don’t known): RSPCA approved rose veal refers to meat from calves not fed the restricted, low-iron diet as is the case with more common white veal meat.

Thousands of dairy bull calves are killed at birth every year Of course, notably noble intentions aside, rose veal is delicious.

During a recent Borough Market browse, I savoured every bite of my sample of Gourmet Goat’s veal.

The wine list is short and sweet and if you're eyeing up two of the larger dishes you'll get two craft beers thrown in for £30 – pretty good, eh?

Flank's menu evolves week to week, and it's so popular with lunchtime crowds that – when it comes to dishes like the epic smoked ham hock and soft egg crumpet or 16-hour beef brisket roll – the kitchen often sells out of nearly half its menu before evening service.

Gourmet Goat is renowned for its East Mediterranean dishes showcasing kid goat sourced exclusively from British dairy farms.

Gourmet Goat has built a signifiant and loyal following since they began trading at Borough Market in 2014, rapidly outgrowing their previous outdoor pitches at Stoney Street and Green Market.

Its dishes are all inspired by recipes from co-founder Nadia Stoke�s East Mediterranean heritage.

On the menu: Slow roast kid goat shoulder and leg cooked with white wine, oregano, bay, thyme, garlic, lemon zest and extra virgin olive oil; and their equally popular grilled kid goat meat kofta, freshly made by Nadia and husband Nick each day using lean kid goat mince.

The larger fixed kitchen space now allows Gourmet Goat to add seasonal specials to their menu such as Kid Goat Stifado, a traditional Greek stew prepared with sweet slow-cooked onions, Greek red wine vinegar reduction, cinnamon and bay, accompanied by giant couscous and grated anari (a Cypriot hard cheese made with the whey of halloumi).

Kid tastes more delicate than mature goat, and if you didn’t know, you’d think it was lamb.

The meat is low in saturated fat and cholesterol.

Some also consider it to be one of the more ethical options if you’re a meat eater.

These billy goats (from Cabrito Goat Meat in the west of England) are a by-product of the dairy industry and would otherwise be slaughtered soon after birth.

Take your pick from two serving options: in a pitta bread wrap, or in a takeaway carton without bread  – both are terrific value.
